Winemaking:
Warm, dry season with ideal ripening conditions and a wet harvest. An estate vineyard blend of three hand-selected blocks at Borenore, all with different personalities, meshing beautifully into the final blend to create an elegant high-altitude expression of cool-climate Pinot Noir.
Tasting Notes:
Colour | Deep red with a crimson rim.
Bouquet | Floral notes, alluring red cherry and quince intertwined with fresh, toasty French oak.
Palate | Seductive red fruits on the fuller side, energetic yet silky and expansive with sandalwood and toasty oak. Tannins are present and still settling, with a slightly resinous, toasty finish that will knit together with time.
Pairs well with:
Meat | Roast duck breast with cherry and thyme jus.
Seafood | Seared salmon with pomegranate & pink peppercorn glaze.
Vegetarian | Wild mushroom and truffle oil risotto.
Vegan | Beetroot and walnut wellington with balsamic-cherry reduction.
Cheese | Triple-cream brie or soft goat’s cheese with cherry compote.

Winemaking | A perfect varietal match for our high-altitude (850m+) Borenore vineyard in Orange. The cool climate preserves tension, freshness, and vibrant energy in this richly aromatic red. By allowing tannins to fully ripen on the vine, followed by gentle extraction during fermentation, we craft wines with silky-fine texture and beautifully lifted aromatics.
Tasting Notes:
Colour | Vibrant purple core with a striking neon pink rim
Bouquet | Expressive aromas of fresh blueberry, blackberry, and violet flowers, interwoven with cracked black pepper, subtle dark chocolate, and a whisper of vanilla-toast oak
Palate | Focused and generously flavoured, with bright blue fruits flooding the palate, framed by silky, fine-grained tannins and refreshing cool-climate acidity

Meat | Grass-fed beef skirt steak with chimichurri
Seafood | Char-grilled prawns with garlic, chilli and smoked paprika
Vegetarian | Roasted beetroot, whipped feta and walnut salad with balsamic glaze

Winemaking | Cool whole berry fermentation with gentle extraction on skins for ten days. Pressed then matured in a combination of barrel and tank for seven months.

Palate | Slippery bright red cherry fruits, complex oak and a velvety tannin finish.
