Tasting Notes:
Colour | Very light straw in colour with a fine, persistent bead of bubbles in the glass.
Bouquet | Elegant citrus and brioche aromas dominate with underlying florals.
Palate | Refreshingly light across the palate with delicate citrus and ripe green apple flavours. The time on yeast lees shows, with creamy dough-like complexity that gives length and a delightfully crisp and cleansing finish.
Pairs well with:
Traditional | Freshly shucked Sydney rock oysters on ice with a wedge of lemon. The bead cleanses, the citrus lifts the brine.
Cheese | Soft triple cream brie at room temperature with plain water crackers and quince. Crisp acidity cuts the cream; lees complexity meets the rind.
Something different | Buttermilk fried chicken with sea salt and a wedge of lemon. The golden crunch echoes the brioche, the acidity cuts straight through the fat.
